Coffee Growing in the Mountains of Honduras

Honduras is one of Central America's important coffee-producing countries, with coffee grown across mountainous regions where elevation, climate, and local growing conditions can produce an impressive range of flavors.

Honduran coffees can range from smooth, chocolate-forward and approachable to bright, sweet, and intensely fruit-forward. Differences in region, variety, processing, elevation, and harvest all contribute to the character of the finished coffee.

At Staccato Roasters, we're especially interested in coffees that show distinctive origin character while remaining sweet, balanced, and enjoyable in the cup.


Natural Process Coffee from Honduras

While washed processing is common throughout Honduras, carefully produced natural-process coffees can showcase another side of the country's coffee. During natural processing, ripe coffee cherries are dried with the fruit surrounding the seed before the dried fruit is removed.

This process can contribute to pronounced sweetness and fruit character, although processing alone doesn't determine how a coffee will taste. Variety, growing conditions, cherry ripeness, fermentation, drying, roasting, and brewing all play a role.

Our Honduras Elvin Suazo Natural is one example of what we're excited to find in Honduras: a clean, expressive natural coffee with tropical fruit character, subtle blueberry, and a wonderfully sweet finish.


What Does Honduran Coffee Taste Like?

There isn't one single flavor profile that defines Honduran coffee. Depending on the coffee, you may encounter chocolate, caramel, nuts, citrus, tropical fruit, berries, and other flavors naturally present in the cup.

Our current Honduras offering comes from producer Elvin Suazo and Finca Rancho Escondido in La Paz. His natural-process IHCAFE 90 demonstrates the more fruit-forward side of Honduran coffee, with bright citrus, tropical fruit character, subtle blueberry, and lingering sweetness.
