Our Story

Staccato Roasters is a small-batch specialty coffee roastery based in Minneapolis, Minnesota.

Before starting Staccato, I spent nearly two decades working in food service and later built a career in Performance Engineering. While those might seem like very different fields, they taught me the same lesson:

Performance matters more than appearances.

A website can look beautiful and still perform poorly. A restaurant can have an impressive menu and still serve inconsistent food. Coffee should be held to the same standard. Beautiful packaging, elaborate tasting notes, and premium prices don't guarantee a great cup.

Over the years I bought a lot of specialty coffee, and while some of it was exceptional, I was surprised by how inconsistent it could be. One bag might be incredible, while the next from the same roaster missed the mark. After years in food service, that simply wasn't acceptable to me. If customers are paying premium prices, they deserve a product that consistently delivers.

Rather than continue wondering why, I decided to roast coffee myself.

The more I learned, the more I realized that exceptional coffee isn't found by accident. It's developed through testing, measuring, tasting, and continuously improving.

That philosophy remains the foundation of Staccato Roasters.

Every coffee we release goes through repeated roast development, blind cupping, and refinement before it ever reaches our customers. We compare every new roast profile against our current production profile, changing one variable at a time so we know exactly what improved the cup. If a new profile doesn't clearly produce a better cup, it doesn't replace the current one.

Every coffee has to earn its place in the lineup.

Our Coffee

We source traceable specialty coffees from respected producers around the world and roast them in small batches here in Minneapolis.

Rather than forcing every coffee into the same roast style, we develop each profile around the coffee itself. Some coffees are at their best with vibrant fruit and floral notes. Others shine with deep chocolate sweetness and a smooth finish. Our job isn't to tell the coffee what it should taste like—it's to discover what it already has to offer and roast it accordingly.

We roast regularly, ship every order fresh, and use compostable packaging wherever practical.

Brew It Your Way

There isn't one right way to brew great coffee.

We develop every coffee to produce the best cup we know how to roast—not to fit a single brewing method. If you need help dialing in your favorite brewer, we're always happy to help.
