This naturally processed coffee comes from producer Elvin Suazo and his family farm, Finca Rancho Escondido, in the mountains of La Paz, Honduras. It delivers tropical fruit character while remaining clean, balanced, and approachable.
Elvin grows approximately 90,000 coffee trees across his 25-hectare farm at around 1,600 meters above sea level.
Coffee grows alongside banana and lemon trees, and the farm cultivates several varieties including Red Bourbon, Yellow Bourbon, Pacas, and IHCAFE 90.
This particular lot is composed of IHCAFE 90 and was naturally processed to enhance sweetness and fruit character. Roasted carefully to preserve its sweetness and fruit character, it produces a bright, clean cup with citrus notes, subtle blueberry as it cools, and a lingering sweet finish—all without becoming overly fermented or winey.

What Makes This Coffee Special?
Finca Rancho Escondido is a 25-hectare farm owned and operated by Elvin Suazo in Honduras’s La Paz department. Around 90,000 coffee trees grow across the property, surrounded by banana and lemon trees in the cool mountain environment.
La Paz is known for its high elevations and cooler temperatures, which allow coffee cherries to ripen slowly and develop sweetness before harvest. For this lot, ripe cherries were selected and dried with the fruit still surrounding the seed, creating the sweetness and fruit character often associated with carefully produced natural coffees.
Elvin’s dedication to quality has also earned international recognition. He was selected as one of 27 finalists for the 2025 Ernesto Illy International Coffee Award, placing his coffee among a small group of producers recognized on the international stage.

Why We Love It
When I first sampled this coffee, I got a blast of fresh pineapple in the wet aroma while brewing it as a V60. That was the moment I realized I had found something special.
After working through several roast profiles and giving the coffee plenty of time to rest, everything finally clicked. Bright citrus, a lingering sweetness, and subtle blueberry notes that emerge as the cup cools make it one of those coffees that's enjoyable from the first sip to the last.
That wonderfully sweet finish was what really sealed the deal for me. It's one of those coffees that's worth slowing down for because it seems to reveal something new as it cools. Once I found the roast I was looking for, I knew this coffee belonged in the Staccato lineup.
