This washed coffee comes from Peru's renowned Cajamarca region, one of the country's premier coffee-growing areas. Roasted to highlight its natural sweetness and balance, it produces a comforting cup that's approachable enough for everyday drinking while still showcasing the quality of specialty coffee.
Grown between approximately 1,650 and 1,800 meters above sea level, this coffee is produced by smallholder farmers throughout the Cajamarca region and brought together through Lima Coffee, a quality-focused exporting organization led by Rony Lavan.
This washed lot is comprised of Catimor, Caturra, Bourbon, and Typica varieties. Careful processing and roasting preserve the coffee's naturally smooth character, resulting in a mellow, chocolate-forward cup with gentle sweetness and a clean finish.
Finding the right coffee for this spot in the lineup wasn't easy. I sampled and cupped a lot of coffees looking for one that would appeal to people who enjoy darker roasts while still delivering the sweetness and balance I look for in specialty coffee. This Peru kept rising to the top, and once I dialed in the roast profile, I knew I'd found it.

Cajamarca has quietly become one of Peru's most exciting coffee-growing regions. High elevations, fertile Andean soils, and a favorable mountain climate create ideal conditions for producing clean, expressive coffees. Today, the region accounts for roughly one-quarter of Peru's coffee production and continues to earn recognition for quality.
This coffee comes through Lima Coffee, led by Rony Lavan, whose passion has been helping small producers showcase exceptional coffees from Cajamarca. Rather than focusing solely on large commercial lots, Rony has built his reputation by identifying outstanding coffees and helping elevate Peru's growing specialty coffee industry. His first year with Lima Coffee, he entered Peru's national coffee competition and won, establishing himself as one of the country's quality leaders.

Why We Love It
Not every coffee needs bold fruit or exotic flavors to be memorable.
After experimenting with multiple roast profiles, I kept coming back to the one that highlighted sweetness, balance, and drinkability. The result is a coffee that's mellow, chocolatey, and incredibly easy to enjoy whether it's your first cup of the morning or an afternoon refill.
For me, this coffee is a reminder that a darker roast can still be smooth, sweet, and full of character without becoming burnt or bitter.
