This Yellow Bourbon is a standout natural-process coffee grown high in the rolling hills of Carmo de Minas. Hand-harvested and sun-dried with the fruit still intact, this well-rounded offering will cater to most coffee drinkers.


Tasting Notes

  • Medium Roast: A well balanced cup with medium tart acidity, juicy sweetness with a smooth mouthfeel and medium-light body. Notes of Lemon, Almond, Ripe Plum. Lighter side of medium.
  • Dark Roast: A mellow cup, with notes of Light Cocoa, Brown Sugar, nuts. Hints of caramel and hazelnut. A nice medium-heavy body. Lighter side of dark.

Recommended Brew Methods

  • Pour Over (V60 or Kalita): Accentuates the fruitier side of the medium but I've been told it's also awesome for the dark roast.
  • French Press: Accentuates body and cocoa richness in medium and dark roasts
  • Espresso: Chocolatey, syrupy, and bold—especially great as a single-origin shot

Roaster’s Notes

I selected this Brazilian bean for its vibrant cup—much livelier than many of the other Brazil offerings I sampled. I was also drawn to the farm's support of CriaCarmo, a meaningful local initiative that invests in the future of children in Carmo de Minas. Not sure how much longer Brazilian beans will be on the menu, due to impending tariffs. Get it while you can!
