Brazil is the largest coffee producing country in the world. This bean comes from the Minas Gerais region, which is known for their coffees. I'm offering a light, medium and dark roast to show how versatile this bean is. Unfortunately, Brazil has suffered from some really bad weather situations recently, with a severe drought being the most recent. This bean is no longer available in the smaller quantities I currently require, but I may bring it back down the road if people really like it.

The light roast brings out the acidity while keeping the overall mouthfeel nice and smooth. The medium roast brings in a bit more body while keeping the acidity there, but I think this bean really shines in the dark roast area (this is sort of a medium dark IMO), with a really strong body and flavors that linger and make it better as it cools. 

Tasting Notes:

Light roast: Mild citrusy acidity with a hint of apricot. Fairly light body, with a nice sweetness about it. Pour overs for the win!

Medium Roast: Same acidity, but more body and lingering light dark chocolate aftertaste, which is certainly pleasant. May pair nicely with a lighter dark chocolate or darker milk chocolate, and a citrus/melon fruit plate. Likely good with all extraction methods.

Dark Roast: Hint of the acidity, but a stronger body and aftertaste. I could have gone darker, but I wanted to keep the acidity in there and tried not to a get bitter aftertaste. I typically don't like dark roasts, but this most certainly has opened my mind, the lingering flavors are impressive. Likely good with all extraction methods, may shine with espresso, let me know!
